Gluten is a composite formed from several different proteins. It is found most commonly in wheat and other related grains, such as barley and rye and Oats. Adding texture and a characteristic chewiness to baked goods, this ingredient is used in a wide variety of other foods as a thickener and binder, flavor enhancer, and protein supplement. Some people can develop an intolerance to these proteins, however; a gluten-free diet often helps to alleviate symptoms caused by this intolerance.


Foods Containing Gluten

Along with wheat, other cereal grains that contain gluten are durum, spelt, and einkorn, as well as farro, graham, kamut, and semolina. Many are also used to enhance the flavor and protein of foods, as well as to bind and thicken their consistency. While the grains are often found in breakfast cereals and various baked goods, they can also be included in a variety of other foods that are not as obvious.
Used as a thickener, gluten can be found in soups and broths, as well as gravies and sauces such as ketchup, salad dressings, or marinades. Since it enhances flavor, it is used in bouillon, spice blends, and other foods such as coffees, dairy products, vinegars, and liquors. It can also be found in the substance used to seal envelopes since it acts as a stabilizer.
Gluten is also used on its own as a protein supplement, particularly for people who do not have access to other protein sources. The protein it contains also makes it useful in meat substitutes, especially those used in vegan and vegetarian diets. Imitation meats or wheat meats, such as seitan, are often made of concentrated gluten. The draw back is most people can't digest Gluten.

Types of Gluten Proteins

Within gluten, there are actually four main proteins: albumins, glutelins, globulins, and prolamins. Glutelins and prolamins are found in higher concentrations in wheat, while albumins and globulins are more plentiful in corn and rice. Many people associate wheat with the term "gluten," however, as it is those proteins that are most directly related to health issues such as celiac disease. Glutelins, in particular, are dangerous for those susceptible to intolerance because of the way that acids in the body break them down.
Most of the protein in wheat — 80% — is made up of the prolamin called gliadin and the glutelin called glutenin. When these molecules are joined together due to a chemical reaction, they stretch and harden, allowing dough to form a light, airy loaf with a chewy texture. As a result, these proteins are commonly found in flour and other baking products.

What Gluten does for Bread

Kneading dough creates the strands that help the gliadin and glutenin molecules to join or cross-link. The more the dough is kneaded, the more links are developed and the chewier the final product becomes. In addition, the proteins thicken when heated, trapping the carbon dioxide produced by yeast. This enables baked goods to rise more and retain their shape instead of crumbling.
The amount of gluten added to the flour can have an impact on the texture of the final product. Bread flour needs more of these proteins to produce a loaf that isn't too dense or crumbly, while pastry flour — which should be flaky instead of chewy — has less. The flour industry measures its concentration with a farinograph, an instrument used to indicate density and elasticity among other elements in flour.

Gluten intolerance is a term that is used to describe four conditions: wheat allergy ,crone's disease, non-celiac gluten sensitivity, and celiac disease or permanent gluten-induced enteropathy . According to research, between 5 and 10 percent of all people may suffer from some form of sensitivity ( The true number may be higher ).  The classical presentation was of a pre-school child with diarrhea and weight loss. Possibly due to nutritional campaigns to delay the introduction of gluten to infant diets, an insidious onset later in childhood, with anemia and poor growth in height, is now more frequently seen. Onset in adult life may occur, with anemia, infertility, and vitamin D deficient bone disease being among the possible presenting features, although gastrointestinal symptoms and weight loss may, as in children, be the main complaints.

Avoiding gluten altogether is the only way to prevent the damage caused by an intolerance, though this can be difficult to do. A gluten-free diet requires a complete understanding of what it is and where it can be found. Gluten is found in many products, so it's necessary for someone following this diet to read labels carefully and know what products might contain it. In general, "gluten-free" means that the product contains less than the minimum standard that is considered to be harmful, though this number varies worldwide. Because so many foods contain these proteins, finding alternative sources for all of the vitamins, minerals, and fiber required for a healthy diet can be a challenge.

What is Liver Failure?

Liver failure is a life-threatening condition in which there is a severe deterioration of liver function. The liver is a vital organ located in the right upper area of your abdomen under the ribs. Liver failure is caused by liver damage. Which makes it difficult or impossible for the liver to function normally in processes that are critical to life and your overall health including:

  • Clearing the blood of toxins
  • Making bile that assists with digestion
  • Metabolizing medications and other substances

There are two general types of liver failure:

What causes liver failure?

Onion Extract Slows Colon Cancer Growth just as Effectively as Chemo Drug!






(NaturalNews) Researchers have just
 discovered that flavonoids extracted
from common onions slow the rate of
 colon cancer growth in mice just as
 effectively as a chemotherapy drug.
 And while the mice on chemo saw
 their LDL cholesterol go up
 (a possible side effect of the drug),
 the mice on onion extract actually
saw their LDL levels drop.

 by 67% in vivo

In this study, researchers fed three different doses of flavonoids extracted from onion,
an oral chemo drug, or saline (as control) to mice, along with a high-fat diet. The fatty
diet was used to induce high blood fats and cholesterol (hyperlipidemia), since that is
a major risk factor for colon cancer, and many human colon cancer patients have this
condition. The highest dose of onion extract slowed the growth of colon tumors by 67%
 compared to the controls after three weeks. The mice on chemo had their cancer
 growth slowed slightly more, but there was no statistically significant difference
 compared to high-dose onion extract. However, there was a major difference in the
 side effects experienced by the mice.

Onion Flavonoids: major benefits without 

the side effects

Chemo drugs are known to carry some serious side effects, and the drug used in this
 study was no exception -- over 100 possible side effects are known, including coma,
 temporary blindness, loss of ability to speak, convulsions, paralysis and collapse.
 It is also known that the chemo drug may induce hyperlipidemia (high cholesterol
 and/or triglycerides) in humans and that is exactly what happened with the mice --
 their average LDL cholesterol levels went up significantly. Not surprisingly,
 onion extract had the opposite effect and significantly lowered the mice's LDL levels.

More impressively, the mice getting onion extract had total cholesterol and
apolipoprotein B levels that were markedly lower (as much as 60% lower for each)
 than controls on the high fat diet. None of this is surprising. Onions are known to
 have the ability to decrease blood fats, and in a recent placebo-controlled clinical
 trial, onion skin extract significantly lowered total cholesterol, LDL cholesterol and
the atherogenic index in healthy young women after just two weeks. But how much
 onion do we need for a beneficial effect against cancer? Unfortunately, the
 authors of the mice study did not disclose what quantity of extract was used.
 However, a recent study out of Europe gives some clues as to what dosage of
 onions might have a meaningful anti-cancer effect.

Onion fights multiple cancers - at the 

right dose

Garlic, leeks, chives, shallots, onions and scallions (or green onions -- which are
just young onions), are all allium vegetables. Previous studies have shown that
these vegetables protect against multiple cancers; however, onions often emerge
 as the most powerful single vegetable, simply because we eat more of them.
 A recent study from Switzerland and Italy has shed light on just how much we
need. Eating up to seven portions of onion per week had mostly minimal effects
. However, eating more than seven portions weekly (one portion = 80 grams)
 had the following remarkable risk reductions for cancers at these sites:

Mouth and pharynx: -84%
Larynx: -83%
Ovarian: -73%
Prostate: -71%
Large Bowel: -56%
Kidney: -38%
Breast: -25%

All of these risk reductions had statistical significance, except for breast cancer,
 which was borderline (P = 0.08). Once again, we see that the healthy, whole
 foods we commonly eat can have a major impact on our health and cancer risk,
 if we just eat enough of them. Perhaps food really is the best medicine.

Cancer: The truth you Doctor might not tell you.

I just recently lost a good friend to complications after recovering from breast cancer.

 I regret not getting her to follow the advice I've collected from the true experts in this field.

Cancer and Oxygen

Dr. Otto Warburg received the Nobel prize in 1931 for the discovery that unlike all other cells in the human body, cancer cells do not breathe oxygen. Cancer cells are anaerobic, which means that they derive their energy without needing oxygen. For more information regarding cancer metabolism, please see our oxygen page. It turns out that cancer cells cannot survive in the presence of high levels of oxygen and this has given rise to a variety of successful treatments based on oxygenating the tissues, such as intravenous hydrogen peroxide, hyperbaric oxygen tank, and blood ozonation (Diamond, pages 912-927). As a preventive and self-treatment, breathing exercises (such as pranayama) and an abundance of fresh air provide a starting point. Most people do not breathe deeply, so they lose the benefit of much of their lung capacity. Most indoor air is ten times more polluted than outdoor air, yet we spend up to 90% of our time indoors. Indoor air in every room needs to be constantly refreshed from the outside. Need we mention the importance of non-smoking? Aerobic exercise is useful to both oxygenate the tissues and move the lymph around. 
Lymph is a colorless fluid that bathes every cell in the body. The body has two circulatory systems, one for blood and the other for lymph. Blood is circulated by the heart, whereas the lymph is circulated by physical exercise. Many tissues depend on the lymph to provide nutrients (including oxygen) and carry off wastes. If the lymph does not circulate then the tissues suffocate while stewing in their own acidic waste products (uric acid, lactic acid, etc.).

Cancer and pH

To understand why some tissues in the body are deficient in oxygen and therefore prone to cancer, it is helpful to understand the nature of acidity and alkalinity. Cancerous tissues are acidic, whereas healthy tissues are alkaline. Water (H2O) decomposes into H+ and OH-. When a solution contains more H+ than OH- then it is said to be acid. When it contains more OH- than H+ then it is said to be alkaline.
When oxygen enters an acid solution it can combine with H+ ions to form water. Oxygen helps to neutralize the acid, while at the same time the acid prevents oxygen from reaching the tissues that need it. Acidic tissues are devoid of free oxygen.
An alkaline solution is just the reverse. Two hydroxyl ions (OH-) can combine to produce one water molecule and one oxygen atom. In other words, an alkaline solution can provide oxygen to the tissues.
The pH scale goes from 0 to 14, with 7 being neutral. Below 7 is acid and above 7 is alkaline. The blood, lymph and cerebral spinal fluid in the human body are designed to be slightly alkaline at a pH of 7.4.

At a pH slightly above 7.4 cancer cells become dormant and at pH 8.5 cancer cells will die while healthy cells will live (The Calcium Factor, pages 66-67). This has given rise to a variety of treatments based on increasing the alkalinity of the tissues such as vegetarian diet, the drinking of fresh fruit and vegetable juices, and dietary supplementation with alkaline minerals such as calcium, magnesium, potassium, cesium and rubidium.

Sri Lanka's major national production consists of agriculture, forestry, tea, gems, raw rubber and rubber products, and the average household income is SL Rs 116,100 (U.S.$2,600). About 23% of the population live in the lightly industrialized (clothing and accessories, gems, rubber products) five major urban centres, and about 73% live in the rural areas, in villages which merge with one another, each a conglomerate of homestead gardens interspersed with tracts of rice paddies. This means that the large impoverished rural population raises all of its own food, and much of the country's food. As is typical of underdeveloped and developing countries - which cannot afford modern farming methods, equipment and fertilizers - they grow their food by the traditional methods of hand cultivation and fertilization by returning all life wastes to the soil. And the latter, incidentally, returns to and maintains the complete natural spectrum of the 72+ trace elements in the soil and, consequently, in all of their daily food. And this is the major cause of the Sinhaleses' extremely low cancer rate and general robust health.
The far lower cancer mortality and lower incidence of other physical and mental diseases among the Sinhalese is even more significant since hygiene among the crowded rural population is a far cry from what we are accustomed too, and refrigeration is practically entirely absent. Their immune systems put ours to shame by a long shot [Sinhalese death rate per 1,000 population: 5.9; world average: 9.3].
The extremely low death rate of the Sinhalese would be much lower yet if so many weren't killed by violence and food poisoning (38.6% per 100.000, and the second leading cause of death). The high rate of food poisoning is due to poor hygiene and the absence of refrigeration in a tropical climate.
It remains to be said that the typical diet of the Sinhalese consists of 95% grains (chiefly rice), vegetables and fruit, and of 5% seafood and meat.

We can also eliminate the notion that the Sinhalese are blessed with unusually healthy genes. The Sinhalese are a rich and varied mix of the original inhabitants (now almost extinct), of 4th century AD settlers from Northern India (predominant), with a long continuing influx of Tamils from Southern India, a 10th century influx of Moors from Northern Africa, an 11th century influx of Javanese political exiles (nobles and chieftains), and in the 16th century, of Javanese (also Balinese, Tidorese, Madurese, Sundanese, Bandanese and Amboinese) soldiers and convicts from Java under Dutch rule - along with a varied admixture of genes from the 5 centuries long succession of Portugese, Dutch and Englisch colonial empires.
That genes are not a factor is further underscored by the almost as low incidence of disease and cancer among the Chinese and Japanese (the second and third lowest in the world by far). And if it were not for the significantly higher rate of stomach and liver cancers (and particularly so among Japanese males), the cancer mortality of these two vast populations would be as low as that of the Sinhalese.
Most significantly though, these two countries also still predominantly practice a traditional agriculture which returns all life-wastes to the soil, and with it, the full natural spectrum of the 72+ trace elements. Consequently, most of their daily food also contains the 72+ natural trace elements. In China in particular, the 6 thousand year-old tradition of returning all life wastes to the soil is so deeply ingrained that it is practised more strictly than any religion. For the great majority of Chinese farmers it is the only fertilizer there is.
We can also eliminate industrial pollution as a major factor. Owing to the fact that Japan is the 3rd largest economy in the world, yet is one of the smallest and most densely populated countries of the world, Japan is the most heavily industrialized country in the world, with all the environmental consequences thereof. Modern in every respect, the Japanese are also subject to the consequent air and environmental pollution, as well as the chemical contaminants in the the wide variety of plastics which are now so pervasive in our lives.
Yet, and only with the exceptions of stomach and liver cancer, the cancer mortality and incidence of disease among the Japanese is almost as dramatically low as that of the Sinhalese. (The incidence of Alzheimer’s, for instance is 5.4% in Hawaii vs. 1.5% of the population in Japan - source: "The Hawaii - Japan Study", Journal of the American Medical Association).

Altogether, these three countries comprise more than one third of the world's population, a combined population of over 2 billion which exhibits the lowest cancer and disease rates in the world, and in many instances, and with few exceptions, dramatically so. And I fully expect that India has a similar disease and cancer rate to that of Sri Lanka - practically all of the same conditions apply - but I could not find any figures. Apparently, India does not yet track these statistics. If India should prove to have a similarly low incidence of cancer and other diseases as that of Sri Lanka - as one may fully expect - then we are looking at about half of the world's population whose incidence of cancer and diseases is dramatically lower than that of the Western World.
Finally, and since about 1/2 (including India) of the world's population has dramatically lower cancer and diseases rates than the Western world, we must now ask why our health sciences have not jumped on this long ago and figured out what makes us so much sicker - and kills so many more of us. And particularly so - given these diverse cultures - since the cause can be isolated so easily, and since the remedy is so simple, so ridiculously cheap and, as these diverse cultures demonstrate, so supremely effective.”



Notes by Healing Cancer Naturally

Some may object that the above observations do not take into account the major lifestyle and probably stress level differences existing between the two countries. While this is true and general perceived stress is likely to be much greater in the US, there still remains the fact that cancer mortality in the US has risen from 1 in 50 to 1 in 3 over the last hundred years, with stress alone being an unlikely candidate or causative agent to account for such a dramatic increase.
So while there is a much lower incidence of cancer in Sri Lanka pointing indeed to a (trace) mineral/vitamin deficiency coupled with toxin onslaught (pesticides, drugs, etc. etc.) as a major causative agent of cancer in the Westernized world, there still IS some cancer occurring in this healthy people. Unless all those stricken by cancer in Sri Lanka were alcoholics or otherwise deviating strongly from the healthy diet enjoyed by the vast majority of the populace, this would be another clue pointing to the likelihood of cancer being multicausal, i.e. having different or several causes. The Findings of Dr. Joel Wallach

On his tape entitled: "Dead Doctors don't lie", Dr. Wallach, BS, DVM, ND., a Naturalpathic doctor, says, "Every animal or human that died of natural causes died of a mineral deficiency".

Symptoms of mineral deficiency according to Dr. Wallach:
Calcium deficiency: Facial muscles are sagging, osteoporosis sets in. The following also develop, according to natural pre-dispositions: heel spurs, kidney stones, calcium deposits, cramps and twitches, PMS, lower back pain. Arthritis is osteoporosis of the joint ends of the bones (in 80% of all cases).

Boron deficiency: Kidney stones are symptoms of a raging calcium deficiency. This condition is quickly cured with addition of calcium (please, not calcium carbonate), magnesium and boron. Addition of this mineral also helps regulate testosterone and estrogen hormone production.
Copper deficiency: Ruptured aneurysms, a ballooning of blood vessels, a weakening of the fibers of arteries, strokes - can always be cured by the addition of copper. Gray hair also disappears then. So do vericose veins and sagging body parts.
Chromium and vanadium deficiency: Low blood sugar, diabetes.
Tin deficiency: Male baldness
Zinc deficiency: Loss of smell and taste. Loss of male libido.

Healing Mineral & Trace Element Deficiencies

1 Colloidal and other mineral supplements

According to Dr. Jürgen Buche’s excellent former Preventorium website, ”The intake of vitamins is virtually useless without minerals... Only organic and colloidal minerals can be assimilated and used by your body cells! ... As the body gets re-mineralized, it also becomes more normalized (and thus more healthy) and becomes progressively less suitable for parasites, bacteria and viruses which can only exist in a de-mineralized and therefore ‘sick’ body.
... the intake of minerals represents the prime reason why living beings (including man) eat. As most foods one can purchase are woefully deficient in minerals (the soil has no longer any of these minerals except NPK supplied by agricultural fertilizers) one MUST supply these in adequate amounts or else ANY disease is ultimately a deficiency disease directly attributable to a lack of one or more minerals."


Organic nutrition

 Seaweed

Seaweed in its various forms is a time-honoured natural staple food particularly in Japanese cuisine. It forms an important part of the macrobiotic diet which is credited with a number of health and healing benefits, even in cases of cancer.
Seaweed is a cheap and complete source of all known minerals and trace elements found in the oceans and the richest source of assimilable minerals on the planet (and therefore highly recommended by me).
Seaweed and other sea vegetables have been a "major player " in chelating (detoxifying) excess ionizing radiation & destructive radioactivity from the body (see Combatting radiation poisoning tips).
Some of the positive effects of seaweed may in fact be attributable to its high iodinecontent:
  • iodine supplementation for instance has a suppressive effect on tumor formation and growth (with suppressed tumors showing a higher iodine content)
  • high iodine levels reduce the risk of prostate cancer by some 30%
  • iodine deficiency leads to dysplasia (alteration in shape, size etc. of adult cells), a potential precursor of malignant changes in the breast
  • iodine deficiency increases breast tumor size and makes cancer cells more aggressive
  • low iodine induces a hyperestrogenic state
  • the book " Breast Cancer and Iodine" addresses the connection between iodine deficiency, fibrocystic breast disease and breast cancer and how to prevent or survive them, respectively (see its listing under Books).
  • iodine is an essential ingredient in the Gerson approach to the healing of cancer and other illnesses where patients are administered thyroid and lugol's solution (lugol's is iodine plus potassium iodide).
With all its positive qualities, seaweed can also contain heavy metals (seaweed is actually used as a bioindicator for heavy metal pollution because of its recorded ability to accumulate heavy metals in its cell walls). So when buying seaweed, it may be wise to enquire about its origin.
Seaweed should be available in any health food store. It can also be purchased in Chinese and similarly specialized food stores. I have been warned, however (by a company who provides health food stores with seaweed), that seaweed from Chinese etc. specialty stores may be unsafe since they don't do quality controls re levels of heavy metals contamination.
Some more info and 5 tips how you can easily integrate seaweed into your diet:
Tip 1: Purchase the ”cleanest” seaweed you can find, grind it up in your blender, pour the resulting blackish powder into a salt shaker or other dish and mix it with some sea salt. Use this mixture as you would normally use salt (in case you do use salt, if you prefer not to use it, simply use the seaweed powder straight as a condiment for a rich daily supply of minerals and trace elements).
Tip 2: For reasons of possibly better bioavailability of the minerals, try to get raw-processed seaweed (but don't fret if you can't).
Tip 3: I sometimes add spaghetti-like seaweed (the one I mostly buy has the natural sea salt still attached to it) to cooled-down noodle dishes or blend it in the blender together with raw vegetables, for instance in a Budwig mix base.
Tip 4: Smaller amounts of non-salty and bland seaweed such as dulse and nori can also be blended into sweet (fruit-based etc.) dishes prepared in a blender. They enrich it while leaving virtually no taste “imprint” in the dish.
Tip 5: For numerous recipes with seaweed, you could purchase a macrobiotic cookbook, try out macrobiotic recipes or look into Japanese cuisine.

Organic vs conventional food and cancer

Flavonoids

Flavonoids are secondary plant compounds belonging to the group of the polyphenols. Flavonoids are the polyphenols most commonly found in foodstuffs, with cancer-preventative effects being ascribed to them. In a recent nutritional study, Danish scientists found that the ingestion of ecological (organic) foods versus conventionally grown foods resulted in a higher intake of flavonoids. (Grinder-Pedersen et al. [2003] Effect of Diets Based on Foods from Conventional versus Organic Production on Intake and Excretion of Flavonoids and Markers of Antioxidative Defense in Humans; J. Agric. Food Chem. 51, p 5671-5676.)
While former studies had only addressed individual flavonoids, the new study analysed the intake and excretion of five flavonoids. ‘The organic diet was found to contain significantly higher levels of the antioxidant quercetin, which was found in significantly higher concentrations in the urine of those eating the organic diet.’ The authors concluded that ‘the growing conditions of fruits and vegetables (conventional vs organic) affected the content of five selected flavonoids and resulted in differences in the urinary excretion of major dietary flavonoids.’"
The fact that ecologically produced fruit and vegetables exhibit higher phenolic contents than conventionelly grown produce has been previously proved (such as by Asami et al. [2003]: Comparison of the total Phenolic and Ascorbic Acid Content of Freeze-Dried and Air-Dried Marionberry, Strawberry, and Corn Grown Conventional, Organic and Sustainable Agricultural Practices. Journal of Agricultural and Food Chemistry 51 [5]: 1237-1241). The study’s authors presume that one of the reasons for the higher phenol content may be the absence of pesticides in organic husbandry. The function of secondary plant compounds is to help plants to naturally repel insects, fungi and bacteria. Conventionally grown produce due to the use of pesticides requires less of these natural ”antibodies”.

Pesticides and cancer

Suggestions on how to cheaply incorporate organic produce into your diet, even when you don’t have a garden

  • Buy bulk quantities of various organically grown seeds (sunflower, cress etc.) and then sprout them which typically increases their nutritional value manyfold. Use the sprouts in salads, blended into a smoothie etc. Make sure to properly store your seeds to avoid molding, mold is a proven cause of cancer.
  • Ask shop owners to make you a deal when you buy larger amounts at once (don't be afraid to haggle).
  • Grow your own tomatoes, cucumbers, zucchini/courgettes and pumpkins on your window sill.
  • Grow your own herbs in pots and liberally add them fresh to meals.
  • Shop around, you may find that there are vast price differences in various shops, I know one health food store which actually offers certain organic vegetables cheaper than the pesticide-laden variety on sale in discount stores.
  • Shop online, often the same item can be found cheaper on the internet than in a brick-and-mortar store.
  • Find and join an organic food cooperative where you live. Buying in this way which cuts out the middleman can save large amounts of money.
  • Last but not least for those who depend on nonorganic produce, there are webpages such as www.ewg.org/foodnews/ who provide a list of fruits and vegetables which are best and worst regarding pesticide content. Make sure to find a list relevant to your country of residence.
